Festive Sandwich Cake
- 2 tins smoked vendace or perch or roach
- 400 g regular cream cheese
- 1 onion, finely chopped
- Garlic
- Fresh thyme, finely cut
- Mustard
- Freshly ground black pepper, 1/3 fresh chili, finely chopped
- 1 loaf of malted bread
Slice the loaf lengthwise into thin slices. Grind the fish into coarse paste in a food processor. Add the other ingredients and mix. Check the flavour. Spread fish paste on the bread slices and form them into a cake. Let the cake stand in the fridge for 24 hours before cutting into servings. Decorate with lettuce leaves and small fish.
